Cajun Comfort Red Beans & Rice

Vegan red beans and rice is a great healthy comfort food.  I recommend an organic, no salt cajun spice mix and to cook your red beans in an instant pot.

  • Red beans
  • Basmati Rice
  • Vegan Andouille sausage
  • Okra
  • Green beans
  • lima beans
  • Tomatoes
  • Onions
  • Chopped garlic
  • Celery
  • Parsley
  • Cajun no salt, organic vegan seasoning
  • Frank’s red hot
  • Cayenne pepper
  • olive oil

Use equal amounts of red beans and rice, cooked via your favorite method and instructions.   Place a dab of olive oil in a large skillet along with all of the vegetables, salt, spices, ppepper and Andouille sausage and stir fry.  Load it up with Cajun seasoning, at least an 8th of a cup.  We like Frontier  co-op Cajun mixture.  Mix in the cooked red beans and rice and mix.  Add Frank’s red hot sauce to taste.
