Buckwheat is a grain that has almost a nutty flavor. It is lower in calories and higher in nutrition than wheat. In terms of flavortown, it makes incredible noodles and pancakes and adds depth, texture and taste. Try these with sauteed fruit and nuts such as cinnamon glazed apples and pecans.
Buckwheat Protein Pancakes
- Organic buckwheat flour 1/2 cup
- Organic general purpose flour 1/2 cup
- Organic pea protein 1/4 cup
- Baking Soda teaspoon
- Salt – Smidge
- Cream of Tartar teaspoon
- nutmeg – 1/8 teaspoon
- cardamom – 1/8 teaspoon
- Cashew/Oat/Soy organic milk no sugar, no oil, cup
- Organic Apple Cider vinegar 1/4 cup
Mix all of the dry ingredients with a whisk. Add milk and apple cider vinegar to top of dry mixture. Whisk apple cider vinegar and plant milk together, then slowly incorporate dry ingredients until no lumps
Heat nonstick pan to medium high. Pour batter until large cake. Wait for bubbles to appear and cake is cooked through. Then flip. Can also be served without flipping and used as a wrap.
