Cinnamon is one of the great, lovely spices and even better, ants hate it. But who knew the cheaper types of cassia cinnamon can cause kidney, liver damage and worse. Not so with Ceylon cinnamon. In fact Ceylon cinnamon has proven ability to help with diabetes, cholesterol and even some neurological diseases. It’s yummy awesome good in so many dishes. Below are classic Ceylong Cinnamon Apples and Pecans with Buckwheat protein pancakes. All vegan and all delicious!
Ceylon Cinnamon Apples
- Cored, Sliced and Peeled Organic Apples, Granny Smith, Gala or some similar crisp type – 2lbs
- Whole Pecans, 1/2 cup
- Organic Ceylon Cinnamon 1/3 cup
- Organic Brown Sugar 1/4 cup
Put the ingredients in a pan on medium heat. Strip and flip until all the apples and pecans are coated and caramelized. Remove from heat. Apples should still be crisp and fresh.
