It is astounding how the humble cashew is transformed with such a few other ingredients and a high speed food processor or blender. One can make vegan sour cream, vegan cream cheese, cheeze popcorn…cheeze! Here are a few recipes for fast fix ups on the sly.
Vegan Sour Cream
Ingredients, raw cashews, nutritional yeast, sea salt, water, lemon juice, apple cider vinegar. I add a thickening agent, currently ground flax seeds. Can be processed with a hand cranking food chopper.
Vegan Cream Cheeze
Make the above vegan sour cream but add garlic powder, onion powder, rosemary, thyme, oregano, parsley and lots of chives.
Vegan Parmesan Cheeze
In a food processor coarsely grind cashews, add nutritional yeast, salt, garlic powder, onion powder a dash of apple cider vinegar, annatto, dash of smoked paprika. Pulse until consistency of grated cheeze.
Vegan Cheeze Popcorn
The topping for cheeze popcorn is vegan butter, salt and a premixed vegan Parmesan cheeze, Toss freshly popped corn in the mixture until evenly coated. Munch and munch.
