Gochujang

Gochujang is a Korean red chili paste that is fermented.  It is a burst of flavor and hot.  It’s sweet, sour, spicy and just so savory it creates a party in your mouth.   Traditionally used in the Korean dish bibimbap, Gochujang can be used as a dressing for salads, a smear in wraps, and an ingredient in a new fusion dish.    Getting quality gochujang is critical and the good stuff doesn’t have additives and has been fermented for years in Korea.   Retail grocery outlets are carrying it often but be sure to read the ingredient list as some brands are just corn syrup and a chemical bag.    Wikipedia has it right:

“Gochujang or red chili paste is a savory, sweet, and spicy fermented condiment made from chili powder, glutinous rice, meju powder, yeotgireum, and salt. ”
